2 lbs chicken parts, or boneless thighs/breasts

4 tbs Jahwaiian Jerk Rub

1/2 cup olive oil

2 limes - one for juice and 1 sliced

Scallions - chopped



  1. Combine the 1/2 cup olive oil and Jahwaiian Jerk Rub into dish large enough to hold da chicken.

  2. Wash chicken and pat dry. Add to dish containing da rub, da lime and da olive oil. Cover and place in fridge for 1 hour minimum.

  3. Bring your grill to medium (4 to 5 seconds with the hand test). I prefer a charcoal grill but any will do, as you probably guessed by now..… 

  4. Remove da Chicken from the refrigerator and let it sit covered at room temperature for about 20 minutes.

  5. Grill the da chicken by indirect method. Have the coals on one side or on da gas grill, turn on one side to high. Place chicken on the non hot side skin side  up and close lid. Cook covered for 25 min. Place chicken on hot side of grill skin side down and cook another 5 minutes with cover off. Serve with sliced limes and chopped onions.

  6. For additional flavor, combine 2tbs Jahwaiian Jerk Rub, 1/4 cup olive oil and 1/4 cup water in small pot on medium heat. cook down till thick, and pour over the grilled chicken. RAS!!!
